The recipe below, which has been adapted from a book by the writer and cookbook author, is an easy and delicious way to make Mexican rice.
I have not used the recipe in my life, but it is very close to the recipe and the book is available on Amazon.
In my opinion, it’s better than anything you’ll find in a restaurant.
I used rice flour, which I normally avoid because of its high sugar content.
I think the recipe would be good in a stir fry or in tacos, too.
Recipe for Mexican Rice (recipe adapted from The Simple Kitchen Cookbook by Jessica Meyer) Ingredients 1 1/2 cups whole wheat flour (white or brown)
