Ingredients 1 pound of chicken breasts 1 small onion, diced 1 cup diced green bell pepper 1 cup chopped cilantro 1/2 cup shredded cheddar cheese, shredded 1/4 cup cumin 1 tsp salt, plus more to taste Directions In a large skillet over medium heat, sauté onions until they begin to soften.
Add peppers, cilantro, cumin, and salt.
Saute for another minute, stirring occasionally, until onions are soft.
Add cheese and continue to cook until cheese is melted and the onions are just starting to soften, about 5 minutes.
Add chicken and cook until the chicken is cooked through.
Transfer to a bowl and set aside.
Next, add bell pepper and cilantro.
Sauté for about 5-10 minutes, stirring frequently, until the bell pepper is tender.
Add cilantro and mix until the cilantro is fragrant and is completely dissolved.
Taste and adjust salt and pepper.
Taste again and add more salt or cumin.
Serve chili with rice or pasta.
Recipe Notes The sauce should be thick and creamy.
The thinner the sauce is, the more chili will be tender.
To make it thinner, add 1/3 cup shredded Parmesan.
If using fresh spinach, use about 1 cup.
